On April 18, 2008,
students and staff had the opportunity to taste three delicious whole grain
salads and vote for their favorite. Saint Paul Public Schools Nutrition Services is
proud to announce the winner:
Corn and Barley Ensalada
Corn and Barley Ensalada is a delicious
combination of barley, corn, scallions, tomatoes, jalepeno peppers and
cilantro
in a cumin dressing. It won by an overwhelming number of votes among
students and more modestly among staff members. It will become a
regular
feature on the cafeteria Choice Bars next fall. The other contestants
in the
contest were Five Grain Salad and Taboulleh.
The Wild About Grains contest is part of an effort to serve more whole
grains that kids will love. Research has shown that the consumption of whole grains
has many health benefits. Whole grains are low in fat and have no cholesterol.
They contain complex carbohydrates which supply energy for daily activities,
and are high in Vitamins B and E, minerals and valuable antioxidants.
