Banana Quality the Week of March 8 3/17/2010 11:53 AMTO: All Nutrition Services Supervisors FR: Jim Groskopf RE: Banana Quality the Week of March 8 We have received comments about the quality of the bananas during the week of March 8th. Some schools may have experienced over ripe bananas. This was probably caused by warmer temperatures and the fact that the cases of bananas were not air stacked when received from the vendor at 1930 Como. If cases of bananas are air tight they do not have room to breathe and the heat generated during the ripening process is trapped inside. We have requested from our vendor that from now on, all cases of bananas are air stacked when delivered to 1930 Como. We also suggest that when you receive bananas open the cases and loosen the plastic to allow bananas to breathe. |
